Taco Time: Cinco de Mayo Style
We can't think of a better way to celebrate Cinco de Mayo than with TACOS! Tony & Maribel - a cooking husband and wife duo from Southern California - are sharing their delicious grilled tacos and homemade tomatillo salsa with us for the occasion. But before we get to the meat of it, let's find a little out about Tony & Maribel. The married couple of 20 years say cooking outdoors is their therapy and brings their family together. Cinco de Mayo Tacos
Ingredients:
Flap Meat (preferred choice, but any thin steak will work)
Carne Asada Seasoning
Corn or Flour Tortillas
Toppings of Choice (onion, guacamole, sour cream, etc.)
Directions:
Season steak to taste and allow to sit for 1-2 hours before grilling. Heat the grill up to around 500, cook the meat about 2 to 3 minutes a side or until meat is done to your liking, then shut the grill down for 3 minutes. Chop steak and add to tortilla. Top with salsa (see below for recipe) and desired toppings.
Cinco de Mayo Salsa
Ingredients:
8 Tomatillos
12 Serrano peppers
4 Garlic Cloves
Chunk of Onion (about 1/4 cup or to taste, see photo below)
1 cup Water
1 TBS Salt
Cilantro, chopped
Green Onion, chopped
Directions:
Grill tomatillos and peppers until charred and softened. Place in a blender with garlic cloves, onion and 1 cup of water. Add salt and blend until smooth. Pour into container and add chopped cilantro and onion. Add additional salt if needed. Serve with tacos (or use for dipping).
